Pie Squared

This one is not for the compost pile. Dave told me to take a picture of this pie as it has taken only eight years of marriage to produce such a gastronomical miracle. Fortunately, my father is visiting (on his way through to the field where he will canoe, look at rocks and live in the wilds with two undergrads and one masters student); so, we were able to use his camera as our battery is still defunct and my efforts to buy one in town have proved futile. Grandpa Nick took all the pictures and, judging by the favourable outcome of my portrait, I have decided that all pictures of myself from now on will be taken from an overhead perch. As Hannah said, "It's like a secret code, Mom. You don't even look pregnant anymore." Or, as she really likes to say, "It doesn't even look like there's a bun in your oven!" But, there is a pie on top of it. And I am more than chuffed that I am behind both the pastry and the filling. To top it off, miracle of miracles, the pie tasted quite good and was eaten in one sitting. Let's see how long it takes me to make another one.I chose to frame myself in pie as I can't seem to delete the second photo. There's bound to be some irony in this but my mind is too muddled to think clearly. Happy August: the countdown is really on now.

Lattice work?! On your first pie?! Impressive for anyone, let alone someone nine months pregnant! And yes, that is an absolutely lovely picture of you! (I, too, discovered the shockingly slimming effect of photos taken from high altitudes thanks to Patrick's attempts to take a picture of me.)

Jenna, Not the first pie. Just the first pie that was half-way decent! I am no baker but allrecipes.com's 'easiest pastry ever' did the trick. Thanks for keeping me in your prayers and thoughts - it means a lot.

Elena, you have one-upped me. I have never, in all my baking days, even ATTEMPTED a pie. Too scared of the pastry (I've always used frozen Tenderflake and pre-made pumpkin pie filling!)- though I may look up this one and give it a shot (someday). But I can't imagine I'll have the nerve to try lattice! Props to you - a well-deserved success.

Also, congrats on being one day away from full-term. Any day now, Baby Boy. You're in our prayers as well.

I have never attempted a pie, either, but that is because I don't like pie. Nathan makes really good pie crust. What kind of pie is it? I can't tell from the picture.

Rebecca, It is an apple pie and I used maple syrup instead of sugar. Dave's favourite is apple.
Jaclyn, Lattice work is very easy - it only looks good. And the crust was just flour, butter, ice water, lemon juice and baking powder. This is the first time that I have ever used baking pdr as I have always thought that the crust would end up like tea biscuits ... but no! And my hand-held pastry cutter really worked to cut in the butter until it looked like coarse meal. I have to admit, the pastry was really easy to make - amazing! (And, yes, tomorrow is full-term - the twins were born at 38 weeks.)

Elena, that's awesome - way to go girl. It looks delicious and no wonder it went in one fell swoop. I love to make pies (am I an odd ball? - oh well) I love to make pastry - actually I make enough to make 3 pies - yes 3! It's just about as messy as making one and then I freeze them unbaked, It's absolutely divine having a blueberry or peach pie in the middle of dark cold January! I can send the recipe at your request. LOL
